Avocado Veggie Tuna Salad Sandwich

This Avocado Veggie Tuna Salad Sandwich is the perfect lunch to make for yourself or your kiddos because it's low-carb, high-fiber, and packed with protein.

What you'll need:

  • 2 slices of Low Carb ROYO Bread
  • 5 oz. can (net weight) solid white albacore tuna in water, drained
  • ¼ avocado
  • ¼ cup shredded carrots
  • 1 tablespoon dijon mustard
  • 2 teaspoons balsamic vinegar
  • ¼ lemon, juiced

How to make:

  1. Toast your ROYO bread.
  2. Combine tuna, avocado, mustard, balsamic vinegar, and lemon juice in a bowl and mash with a fork.
  3. Fold in the carrots (or top with carrots).
  4. Make your delicious tuna sandwich and enjoy!
