Everything Hummus Egg Salad Sandwich

This recipe was developed by Amanda Litman, an Integrative Nutrition Health Coach and the CEO & Founder of Health by Amanda Robyn. Her approach to wellness is not "one size fits all". What you'll need:

  • 2 slices ROYO Bread (any flavor)
  • 2 hard boiled eggs
  • ¼ cup hummus
  • 1 tablespoon dijon mustard
  • 1 teaspoon balsamic vinegar
  • ¼ cup lemon, juiced
  • Everything bagel seasoning to taste

How to make:

  1. In a medium bowl, mash eggs with a fork.
  2. Add hummus, mustard, balsamic vinegar, lemon juice, and everything bagel seasoning and mix thoroughly.
  3. Toast your ROYO bread then top your ROYO bread with the egg salad and enjoy!
